"Factors Affecting Yield and Quality in Olive and Olive Oil Production
Mücahit Taha Özkaya Ankara University, Faculty of Agriculture, Department of Horticulture, Ankara
Abstract:
The quality and yield of the product obtained from the olive tree depend on cultural practices in the orchard. This process begins with the selection of varieties and pollinators in new facilities, continues with the quality of seedlings, and, as in old orchards, depends on cultural practices such as irrigation, fertilization, pruning, agricultural pest control, and timely harvesting. A healthy and clean olive arriving at the brine house or oil mill after harvesting is like a silk fabric. From the orchard to the factory, the stages of production determine the quality of this silk fabric, and the factory's compliance with the rules results in the production of either a dishcloth or a silk shirt from this fabric. Of course, when the factors affecting yield and quality starting from the orchard are added to the factors in the factory, it is not yet complete. Now, the storage and packaging, which will continue until reaching the consumer, come into play. You may have produced a good silk shirt from good silk fabric, but due to storage and packaging errors, a Natürel Sızma Olive Oil or table olive with deteriorated quality, like an unworn silk shirt that goes to waste, is produced before it is consumed."
